One of the bad things about being an espresso nut is the way one subconsciously judges the performance of coffee bars. I listen to the milk steaming, take a peek at the extraction, cleanliness of the machine etc. Yesterday I went to a new local place together with a former colleague of mine. I immediately noticed that they had a beatiful 3 group LM Linea and a LM grinder. Problem was that they seemingly didn't know much about brewing espresso and steaming milk. Well, I guess they serve decent drinks, but it is such a shame to see one of the world's best machines being used that way. Why didn't they spend less on the machine and hire someone to train them instead? 6/17/2003 01:31:00 PM
